Thanks so much for posting this article, it really worries me how many people I've run across who literally believe that during an emergency, that it "won't matter" to them what type of food they're eating.
This is particularly crucial in the case of young children and the elderly, or indeed, any finicky eaters simply are NOT going to start eating wheat berry gruel and other strange concoctions, and many times wouldn't be able to digest many of the different grains & legumes, anyway. |

Terrific article. Validates most of my own prepping strategies. Did not realize that acidic foods are only good for 12 - 18 months, I'll assume that includes chilli and ragu.

My Hormel CHILI has very long expiration dates, sometime in 2008 -- so be sure to check each individual can for the expiration date. Somewhere online I read that Hormel brand foods often have very long shelf life because they cook the food itself in the same cans we buy at the store ..... however, I don't know anything more about this, but evidentally, most other processors cook the food first, and then can it....
