Went to "Grocery Outlet" , they have some great bargains (not everything!). Got a case of canning jars, Pectin, tons of great cheese (for now). Rolled, flavored Polenta for $1.50, have been looking for ages for those! Canned meats are cheap, all kinds. If you one of these stores available to you, check it out!

Howdy RR.....

Polenta is basically cooked corn meal.  It seems to have gotten a new life in the last several years when they started preparing it, putting it in clear plastic tubes, (like you would find pork sausage), and adding different ingredients to perk it up. 

You can get several different varieties (at least in my area).......some have sun-dried tomato, garlic, herbs, parmesan cheese, jalepeno peppers and all kinds of things.  The great part is that it needs no refrigeration until opened and the packages I get are 16oz anyway so they make a dandy prep.
 
If you like, you can make your own, following the directions for corn meal mush on any box/bag of corn meal.  This was a very inexpensive weekly staple made by my Italian grandmother who would then put it in a pan and bake it.  Top that off with some pasta sauce and it's a nice change from spaghetti.  Baked polenta or that you buy in a tube can also be cut in squares or sliced like cookie dough and fried (in olive oil, of course) for either breakfast (with a little maple syrup) or a side dish.  Yum.....I'm getting hungry.......Thanks Femvet for the idea!!!
 
By the way........does that ostrich ever blink?

Preps.......preps......and more preps.......it seems to have taken over my life but it sounds like I'm not alone in that boat.
 
Just got back from a 1 week vacation and we shinnied up into the attic and determined it was able to be used for storage.  Put down a plywood floor and started putting supplies up there.  Someone on one of these threads made a joke about using toilet paper for insulation........I think we're good to about -30 up there now.........will let you know.  Wonder what the K factor on that might be..........
 
If you don't hear from me again it appears the ceiling wasn't able to support the weight afterall and you'll find me someplace in this house flattened to the thickness of a Rye-Krisp.

Thank you .  I have bought cormeal in 10 lb bags...I will pull some out and try it.  Sounds kinda like grits for breakfast and I love those.
 
My ostrich is afraid to blink...he might miss something!LOLLOL

Flavored Polenta is extremely versatile and stores extremely well! One of my favorite recipes is sliced polenta in a 9 x 12 baking dish with nice, big chunks of zucchini, mushrooms, italian sausage. Pour a large container of spagheeti over sauce over it. Half an hour in a 350 degree oven, then sprinkle with cheese and bake for 5 minutes. YUMMY!!!!
The rolled polenta is a perfect storage item: Nothing to prep, no dirty pots to clean and a nice change from rice based dishes.
