It's the size of the can. If you go in the grocery store, go to the institutional size food in cans, they are the big, big sized cans meant to feed alot of people. Those are #10 cans.

You don't need to bother with these cans unless you have a lot of mouths to feed. If you only have a few people and the power is out (no refrigeration), you'd have to eat the whole can of food  in  a short time or else it will go to waste. I don't stock up with these cans for that reason--I get normal-size cans because they're equal to one or two meals.

Iron Mommy is correct except for dehydrated foods. I purchase these dry products in #10 cans because I will only open these if times are bad and they will be uesed before they can go bad because they are dry and I also have plastice lids that fit them. For dry foods this is more economical to pack this way.

Never like Iron Mommy says purchase "wet" foods in #10 cans as preps unless you are feeding 50 people and they eat it all up that day or it will spoil.
