Found this today:

Before starting recipes for cookies or cake, or other recipes calling for egg, combine 1 tsp. unflavored gelatin with 3 tbsp. cold water and 2 tbsp. plus 1 tsp. boiling water. This mixture will substitute for 1 egg in a recipe.

ReadyMom...thanks so much.  Have two containers of unflavored gelatin in preps.  Thought they might be nice for cold meat aspics but this makes them even more useful.

I've used this (tried both cookies and pancakes) and it indeed works.   It works best if you prepare the mixture as indicated above and then put it in the freezer for a minute or two while you're preparing whatever batter.  When the recipe calls for an egg, take the mixture out of the freezer and whip until frothy, then add to batter. 
 
Cheaper than egg substitutes.
