Pumpkins are in the store.  Does anyone know how long pumpkin seeds keep?

We take the pumkins seed every year and plant them...They don't all come up put most do...We just lay them on a cookie sheet and then when there dry we put them in an envelope in a dry place.
 
So I only know they last one year and I know not all of them will come up.
 
We have a nice pumkin patch and DH takes some of the seeds and bakes them in oven at 200 degrees for about 20 mins...I like them salted he doesn't.  Yummy.

CabinLas, after drying your seed you can place them in the freezer and use them when you get ready to plant.

Instead of making Jack 'O Lanterns out of pumkins this year why don't we decorate them with ribbons, flowers, cutouts or other then use the pumkin to make pumkin butter? The cut outs ruin the pumkin. Just an idea.

Pumkin butter is made much like apple butter.

Maysday (and anyone else), Do you have a pumpkin butter recipe you could share with us?   I purchased some at a farmers market while vacationing several years ago.  Quite tasty.  Thanks in advance.

Here is a good recipe. If you make it let me know what you think. Wait till it's at room temp. to taste. Good luck.

 
PUMPKIN BUTTER

 Ingredients

4 lbs. pumpkin
2 lemons
sugar
1/2 tsp. each, cloves, cinnamon, nutmeg
pinch salt

 Method

Mash the pumpkin and lemon meat in preserving kettle. For every 1 cup pumpkin, add 3/4 cup sugar and a pinch of salt. Add the spices. Mix and let stand overnight, refrigerated. In the morning, boil slowly, stirring well. Pour the mixture into sterilized 1/2-pint jars to within 1/2 inch of the top. Put on a cap, screw the band firmly tight, and process 5 minutes in a boiling water bath.

You need to dry them up-and then you can preserve the seeds.

I slice it open, rake the seed out on newspaper, use the flesh to make pumkin bread, pies, or butter or bake. I dry the seed completely then freeze them til needed. It works.

We grew some giant pumpkins last year and to my surprise they totally took over part of the garden,the seeds i kept and dried ,stored them in the shed they seem ok,we found this link helpful if you plan to grow your own pumps. http://www.howarddill.com/ - http://www.howarddill.com/

You know what I was wondering?  Aren't pumpkin seeds supposed to be yummy to eat and good for you?  I was wondering if I could dehydrate them in my dehydrater and eat later.  Anyone know anything about doing that?

all this talk about cutting pumpkins up is making be kinda queasy.
 
 
 
Some day not soon I'll grow up...I promise. LOL
 
Don't forget you can can pumpkin....Just peel the skin scrape the guts cut into 2 inch pieces and boil..It's the best pumpkin pie you'll ever have.  Oh I use pumpkin spice...So I cheat little..

Hi Happy ...
does it need to be pureed or anything because of the fibers?  What's the best pumpkins to use for canning, just the every Halloween at the store variety type?
How much spice do you put in?  Pints or quarts? 
 
And Maysday, that pumpkin butter recipe looks delicious ... I'll have to give it a try as well ...
