I have purchased Two packets of Tamiflu and will buy another four so as to help protect me, my wife and daughter should the worst happen. I notice that Amantadin is sometimes listed as a drug which could also help against bird flu. This is a much cheaper drug so I am thinking about buying several hundred tablets so my family could take one every day during any pandemic and so (in theory) reduce the chance of any one of us becoming infected (I understand Tamiflu also helps prevent infection) Does anyone have any opinions or information on how effective Amantadin may be? have there ben any tests using it? Are there any other anti-viral drugs to consider which are cheaper than Tamiflu?

You can extend the life of antibiotics further by refridgerating them.  Not freezing, that can crack some chemical bonds, but nice and cold, just above freezing is best.

Widespread resistance to Amantadine has been shown in many circulating flu strains, so it likely wouldn't be of any use. I personaly don't have much faith in Tamiflu either. If it ever worked (and there are serious concerns in the medical community that it's efficacy was grossly exaggerated by Roche) it's being over-prescribed and viruses are now developing resistance.
