I recently made Syrian flat bread on two occasions…on the first, I tried out a recipe with whole wheat and white flours to test it. It was good but I changed it up a bit.  On another morning I made another batch of it and a white flour only recipe, again with a few changes. So here’s my variations.

Khubz ‘Adi — Ordinary Syrian Flatbread  ( WAS MY SOURCE / MY CHANGES ARE IN THE RECIPE ) 

“…and bread sustains a man’s heart.” — Psalms 104:15

Yield: approximately 8 small rounds

1/2 teaspoon sugar

1 package fast-acting rapid rise yeast dissolved in 3 cups warm water

1 1/2  cups white bread flour

1 ½ cups whole wheat flour

1 ½ teaspoon kosher salt

1) Add sugar to the dissolved yeast mixture, which should be bubbly after standing for about 5 minutes.

2) Mix  the white and whole wheat flour and salt in large mixing bowl. Make a well in the center of the flour mixture and slowly pour in the dissolved yeast mixture. Stir to combine, and knead by hand in the bowl for about a minute until the dough is soft and sticky. Turn out onto a flour-dusted work surface and knead gently for about 3 to 5 minutes until the dough is elastic and no longer sticky to the touch. (You can also use dough hook of a mixer to knead the dough.) Place dough into a clean mixing bowl. Cover the dough with a damp towel. Seal the bowl with plastic wrap and let dough rise in a warm place for about a 1 hour or until it doubles in size.

3) After the dough has risen, divide into quarters and work with one quarter at a time, keeping the rest covered. Divide the first half into 4 fist-size balls. On a flour-covered surface, flatten each ball with a rolling pin or by hand until it is 4 to 6 inches in diameter. Place rounds of dough onto ungreased baking sheets, leaving ample space between them. Repeat with the remaining quarters. Cover each baking sheet with a towel and allow to rise for a minimum of 15 minutes.

NOTE **  I let mine rise for a good hour or more and then pricked each round with a fork prior to baking.

4) Preheat oven to 525°F.

5) Bake the rounds for 4 to 5 minutes, monitoring the process closely (loaves transition from done to burnt very rapidly). The heat must be even; otherwise, the bread does not puff properly.

NOTE ** I baked for about 3 minutes and then turned them over for even browning.

6) Remove loaves and cool on wire racks. Do not stack the loaves while cooling. Serve immediately or wrap tightly and freeze.

The above recipe is from Forward.com. While I pasted it here  visiting the article Shabbat Meals : Syrian Flatbread Transcends Generations by Poopa Dweck is a wonderful read.   She takes you back to her grandmother’s time, when the women were preparing their bread and then taking it to communal outdoor ovens…even if you are not going to bake the bread, it is a nice read, and an excerpt from a book that she wrote.

The white breads are baked at a slightly lower temperature but basically I did the same…pulled them out after a few minutes and turned them over for even browning, pricked with a fork prior to baking, etc. I let BOTH breads rise once they had been formed into rounds for a good hour.

White Flour Syrian Bread Ingredients :

• 1 package yeast dissolved into 1 1/8 cups water

• After sitting for five minutes, add 1 /2 teaspoon sugar, and then  2 T oil ( I used virgin olive oil )

• Mix 1  1/2 teaspoons salt and 3 cups flour ( I used bread flour ) into a separate bowl

• Make a well and add the yeast mixture. Knead for a wee bit then turn out onto a floured table or board and knead for a few minutes until smooth and elastic.

• Let rise in a clean bowl for an hour or two. Punch down and create 8 fist-sized dough balls. Roll them out, cover with a towel and let them rise in a warm place for an hour. Back at 475 degrees for 4-5 minutes, turning as I recommended earlier for even browning.


As long as you watch the clock, and don’t let these overbake, and put them into baggies ( or your storage of choice ) as soon as they have cooled a bit, they will be incredibly moist for days on end.  Great at room temperature, warmed up or toasted.

So awesome you ladies are such accomplished bakers.

I will try them soon; just so happens I have some wheat flour I was going to use for dog treats...haven't opened it yet, so I just repurposed it...can't wait to Syrian bread a try.  

I love history and was wondering how this bread have been served In the past?  Would it have been made by shepherds? I was thinking lamb...

A friend sent me an egg substitution for baking today; it is 1 tbsp cornstarch with 3 tbsp water for each egg.  Haven't tried it yet, but sounds like it might work.

I've been getting grocery deliveries for fresh items.  Inventory is limited.  Not worth it anymore, going to ride the pile for awhile.

I had to go out today to pick up meds.  Stopped off at the market and they had YEAST!  It's Fleischmanns which isn't my favorite brand, but hey.. in a pinch if I run out...!

Have gone into full lockdown.  But before I did, went to get some hearing aid batteries..... GONE.... ALL of them were gone..... Had to get my Sam's card out and get some from Sam's.  it was really wacko.     So I got 24 batteries.    I go thru them in about  
days to 60 days.  tt 's going to be a long hard battle.

No eggs, meat, or canned meat available(except for a few wierd potted meat things), in the 5 surrounding Wally worlds around me.....apocalyptic. 

And no canned pasta at ALL...........thankfully, i have enough Chef boyardee pasta to make the boys a can castle

In re: Toilet paper.

I have a friend in Vermont who was down to using her husband's mismatched cotton tube socks and a bucket of bleach treated water before she finally found toilet paper. It's insane. Household toilet paper is made here in the U.S.A. It's only the big rolls you find at rest stops and some restaurants that are made in China.

Scott company must be cleaning up (excuse the pun).

This does not affect me personally     But the papers (and tv news) here are full of one shortage...the closing of boarders has lead to a shortage of smuggled illicit drugs.....also the prisons are reporting that the inmates are having to deal with withdrawal symptoms.  


We haven't had problems yet, but our local chemist/pharmacy told us that soon there might be problems with asthma medicine...this comes to us from the UK and now that they are out of the EU and with the problems of closing boarders they thought that supplies will be disrupted.  Today we got 3 months supply for my wife [as you see this puts her into one of the risk groups for Corvid-19].

Being LDS, one of the things that has surprised me is the fact that the church’s food storage store website is completely out of stock. As much of a back stock as they keep, it shows just how much of a demand there is for these types of storage products.  Going on and seeing everything out, while not unexpected, was still a bit of a “wow” moment for me. It made glad that I picked up a few extra cans of wheat while I still could.

That's stunning, BeachMama.  LDS seems to be the first on the ground in disaster.  Katrina, Sandy, etc... Their generosity saved many lives.  For them to be running out of food is just.. well.. stunning to me!

I am not surprised we have 300 million people that need to be fed over the next several months.  Most of us knew that everything will be out.  If this lasts too long we will look like Socialist/Communist country with empty shelves and veg. bins.  I guess that is why so many of us put lots of food away in our stores. 


Plant a garden that is what I am doing.

We too will be planting.  It seems the best option.  Even if stores are large, tinned and dried foods have lost some of their vitamins in the preserving process and the chelation bonds are broken for the minerals.

A small handfull of fresh greens fills that hole.  Even without a garden, a windowsill can make a big difference.

???   The only thing that saves people with advanced infection is ventilator therapy, the case fatality rate for those without access to advanced healthcare is much higher.  1 out of 200 is a CFR of 0.5%, I haven't seen a number that low reported anywhere....it is much higher CFR than seasonal flu, in the 3% range and more like 5% in subgroups.  And, plenty of cases younger than 80 are dying.

In the United States alone:

Two 17 year olds dead

One 1 year old dead

A 13 year old dead

A 6 week old infant dead

That’s just all the under-20s I can think of off the top of my head.

It’s not just 80 year olds. Who, btw, are humans as well, and deserve the dignity of being seen as deserving life. People are acting as if the elderly are sacrificial lambs to this virus. Sorry, but to me, my parents matter despite their age!
