I want to stock some all in one  bread mixes for the winter, but they have very short shelf life dates on them, just 5 or so months, would it be possible to freeze the whole packs to extend the shelf life has anyone ever done this ?

I don't see any reason why this wouldn't work.
 
FWIW- I routinely use dry mixes past their date (sometimes a year or more!). They are pretty stable if kept in a controlled environment.

I also use out of date mixes, if bread dosen't rise well add half a teaspoon of dried yeast to the next batch. I keep dried yeast in the freezer.

Freezers only hold so much and when you factor in the electricity and space you might save money buying #10 cans made for long time storage. You can buy Whole Hard Red or white Wheat by the case at http://store.honeyvillegrain.com/hardwhitewheatCASE.aspx - Honeyville for about $1.5 per pound.

It lasts for 10-15 years but you need a hand powered wheat grinder to turn it into flour.

Bread molds very quickly but you can freeze store bought cooked bread. When it defrosts you can't tell it's been frozen. My kids never know even in a side by side taste test.

Would you happen to know whether the longevity suggested for the whole hard red or white wheat also applies to other wheat strains? Do you know what gives these two strains such a long shelf life?

The shelf life is increased by the way it's stored not by the type of wheat. It's stored in #10 cans. You get about 5 pounds of wheat in each can. Depending on the company some of the cans are nitrogen purged and or oxygen absorber packs are added. Costco's Shelf Reliance Wheat lasts 30 years sealed and 2 years once opened.

Wheat bought in bags does not last very long as the oxygen and humidity turns it rancid.
